Greek salad
Ingredients:
- Cucumber
- Tomatoes
- Bell pepper
- Kalamata olives
- Red onion
Toppings:
- Olive oil
- Balsamic vinegar
- Lemon juice
- Feta cheese
- Dill (optional)
- Mint (optional)
Extensions:
To make the salad a bit more filling—a whole meal—add chickpeas, couscous,
or both.
- Roasted chickpeas
- Pearl couscous
I like to cook the couscous in a vegetable broth.
Directions:
- Chop ingredients into roughly even pieces.
- Mix the chopped pieces together.
- Dress with olive oil, balsamic, lemon juice, feta, and herbs to taste.
